Lemon Rosemary Baked Tofu from Moosewood: New Classics Rest.


Serves 2 to 4
Prep: 15 minutes
Bake: 1 hour

Preheat oven to 400.

Rosemary Lemon Marinade

1/4 cup fresh lemon juice
2 Tbsp soy sauce
3 Tbsp vegetable oil
1 Tbsp minced fresh rosemary or 1 Tsp dried.
1/4 Tsp ground pepper.

Cut tofu into 1/4 inch slices. Pour 1/2 marinade into baking pan. Add Tofu and pour remaining marinade over. Bake turning after 30 minutes.
